Madrid's Le Bistroman Presents a Unique 9-Course French-Japanese Fusion Menu Paired with Artisanal Sake Madrid, Spain – Le Bistroman, a renowned restaurant in Madrid, is making waves with its innovative 9-course tasting menu. The menu, a collaboration between Chef Stéphane del Río and sake expert Mayuko Sasayama, masterfully blends French culinary techniques with the rich culture of Japanese sake. The result is a refined dining experience unlike any other. The video provides a detailed glimpse into the menu, highlighting each dish and its corresponding sake pairing. Appetizers include a cod brandada tartlet, sardine pissaladière, and duck croquettes, perfectly complemented by Kidoidzumi Sparkling sake. Other courses feature oysters with cucumber gratin, foie gras with lemon zest, and asparagus with morels, each paired with a carefully selected sake to enhance the flavors. "Each sake was chosen to complement the dish's specific flavors and textures," explains Mayuko Sasayama in the video. "We wanted to create a harmonious balance between French elegance and Japanese tradition." The main course, quenelles of hake with carabineros sauce, is paired with Tamagawa Kimoto sake, while the ravioli du Dauphiné with ricotta and Comté cheese is served with Edo Genroku, a sake made according to a 1700s recipe. The meal concludes with a sheep's milk curd with citrus fruits and a Grand Marnier soufflé, accompanied by Yuzu Sake and Endo Koshu respectively.
