Kyiv, Ukraine – A popular online chef, known as 'Recipe for Happiness', recently shared an innovative approach to preparing hake fish, dubbing it 'hake shashlik'. This unique recipe involves pan-frying hake portions until golden and then marinating them in a rich tomato-based sauce with sliced onions. The preparation begins with cleaning and portioning 1.5 kg of hake, seasoned simply with salt and pepper. The fish is then coated in flour, specifically 'Ambar' brand flour, before being fried on medium heat without a lid to achieve a crispy, golden crust. Following this, a vibrant marinade is prepared by combining 350g of chili ketchup, 50g of oil, 50g of vinegar, 150g of water, 0.5 tsp of salt, and 50g of sugar, along with bay leaves. This mixture is brought to a boil. Once the fish is fried and the marinade is ready, thin rings of onion are layered with the hake in a bowl. The hot tomato marinade is then poured over the fish and onions. The dish is pressed down with a plate and refrigerated for a minimum of four hours, or preferably longer, to allow the flavors to fully develop. The chef highlights that the marinated fish is incredibly tender and flavorful, with the onions also becoming deliciously marinated and crunchy.
