Kyiv, Ukraine – A popular online chef, known as Yelyzaveta Ivanchenko, recently shared a highly anticipated recipe for a homemade eggplant and vegetable preserve, which she hails as a 'taste of childhood.' The detailed recipe, designed to yield six half-liter jars, has quickly garnered significant attention from home cooks across the country. The preparation begins with 1.5 kilograms of eggplants, cut into pieces and salted to remove bitterness. This is followed by the addition of 1 kilogram of tomatoes, processed through a meat grinder, along with 0.5 kilograms of sweet bell peppers and two onions, all finely chopped. The mixture is then combined with 100 ml of oil, 1 tablespoon of salt, 2 tablespoons of sugar, 1 teaspoon of red paprika, and 5 cloves of minced garlic. The vegetables are simmered on medium heat for 30 minutes. After this initial cooking period, 2 tablespoons of 6% apple cider vinegar are added, and the mixture is stewed for an additional five minutes. The hot preserve is then carefully transferred into pre-sterilized jars and sealed. Ivanchenko noted that the balance of sweet and savory flavors is 'perfect,' making it a delightful addition to any pantry.
