Chef Melis Birkholz, a Top 10 contestant from MasterChef Germany 2025, recently shared her recipe for a wonderfully creamy Turkish lentil soup, Mercimek Çorbası. This comforting dish, known for its rich flavor and smooth texture, is presented as an easy-to-follow guide for home cooks. The recipe begins with sautéing diced onions, potatoes, and carrots in rapeseed oil. Following this, a tablespoon of tomato paste is added and briefly roasted with the vegetables. Thoroughly washed red lentils are then introduced to the pot, along with two liters of water and a blend of salt, dried mint, chili flakes, and pepper to taste. The mixture is brought to a boil and then simmered for 20-25 minutes until the lentils and vegetables are tender. Finally, the soup is pureed to achieve its signature creamy consistency, any foam is skimmed off, and it's ready to be served, traditionally garnished with lemon slices and additional chili flakes.
