This discovery has prompted an immediate investigation into the authenticity of food products widely consumed during the popular celebration. Evelyn Fortún, Director of INLASA, stated that the findings constitute a "deception" to consumers. "When a product obtains a sanitary registration, it indicates the raw material used in its production," Fortún explained. "When the raw material changes, it becomes a deception to the consumer." In addition to horse meat, INLASA is also investigating the potential presence of dog meat and other undeclared animal products in sausages. Concerns have also been raised regarding excessive levels of colorants and nitrites, which could pose health risks to consumers. Authorities have announced that they will implement stringent control measures and sanctions against producers found to be in violation of food safety regulations. Consumers are advised to exercise caution when purchasing sausages for the San Juan festivities and to look for products with verified sanitary registrations.
