SARUD, HUNGARY – A unique culinary tradition is being preserved and shared at Lake Tisza, where the thorny water caltrop, locally known as Sulyom, is meticulously harvested. ÉlményfaluSarud, Tisza-tó, a local active and ecotourism center, recently showcased the challenging process of collecting this distinctive aquatic plant. The water caltrop, described by harvesters as 'ugly, spiky, and edible,' is a bio-ingredient found in the lake's waters. Its collection is a labor-intensive task, requiring special permits and manual gathering, as its four sharp spines can pierce through most gloves. 'We collect them one by one, almost like picking berries, but with much more caution due to the thorns,' explained a representative from ÉlményfaluSarud. The harvested Sulyom is a key ingredient at the Sulyom Tájétterem, a local restaurant in Sarud, where visitors can experience its unique flavor. The establishment is actively seeking volunteers to assist with the harvest, underscoring the community effort involved in bringing this traditional flavor to the table. This initiative not only provides a rare gastronomic experience but also highlights the ecological significance of the water caltrop within the Tisza-tó ecosystem.
