Seasonal Spanish Delicacy: Charlito Cooks Shares Affordable Marmitako Recipe
Chef Charlito Cooks recently shared a detailed recipe for Marmitako, a traditional Spanish fish and potato stew, highlighting its seasonal ingredients and affordability. The video, uploaded on August 5, 2025, showcases the preparation of this hearty dish, which features fresh bonito, potatoes, onions, green peppers, and garlic. "I found bonito for less than 10 euros a kilo," the chef noted, emphasizing the economic benefit of cooking with seasonal produce. He also pointed out that the entire vegetable portion for five servings costs "no more than 3 or 4 euros." The recipe involves sautéing finely chopped vegetables, adding tomato and choricero pepper pulp, then simmering "chascada" potatoes in fish broth. The bonito is added at the end to cook with residual heat, ensuring a perfectly juicy texture. This approach, according to the chef, is "the key to perfect fish."
