He emphasized that only extra virgin olive oil contains beneficial bioactive compounds like oleocanthal, which has anti-inflammatory effects similar to ibuprofen, and polyphenols, powerful antioxidants that protect arteries from oxidative stress. Dr. Rojas cited multiple important studies, including those from Harvard University and the PREDIMED study, which support these claims. These studies underscore that the direct anti-inflammatory effect on artery walls leads to a lower risk of plaque rupture, infarction, and cognitive decline. He urged the public to ensure they use only extra virgin olive oil and consume it raw to maximize its protective properties for both heart and brain health.
