Chef Zach Rocheleau has unveiled a new recipe for an 'XL Grinder Salad Wrap,' designed to be both satisfying and macro-friendly. This substantial wrap boasts 516 calories, 26g carbohydrates, 20g fat, and an impressive 58g protein for the entire serving. The core of the wrap is a homemade 'Grinder Slaw,' prepared with a base of 90g plain non-fat Greek yogurt, 30g light mayo, and 20g red wine vinaigrette, seasoned with minced garlic, oregano, red pepper flakes, salt, and black pepper. Sliced pepperoncini peppers, 250g of lettuce, and 75g of red onion (soaked to reduce sharpness) are then mixed into the creamy dressing. For the wrap itself, Rocheleau utilizes a Joseph's Lavash flatbread, layering it with 5oz of deli oven-roasted chicken breast, sweet chili paste, 12 turkey pepperonis, 14g of 2% Colby Jack cheese, 3g of Parmesan cheese, and a slice of fresh tomato, topped with half of the prepared grinder slaw. The wrap is then carefully rolled and sliced, offering a convenient and nutritious meal option.
